I also find myself setting the temp lower on some things, if I know I’m going to be away all day and not be able to tend to the finished product as soon. I have found out you can’t really “over-dehydrate” most foods so if you accidentally leave it running for a few hours, no big deal. Lastly, and probably most obviously, is the price.
